Nut Butter

When we got married I kinda got adopted into a new way of thinking.  That is, a new way of dressing a morning food favorite...peanut butter.

That's right...peanut butter...on pancakes and waffles.

Now don't judge it until you try it.  Not only is it yummy, but it adds protein - a MAJOR bonus for all pregnant women, those balancing sugar, and workout junkies!

Then last year autumn came along with a craving for pumpkin and a need for more protein than sugar.  So I found this recipe for pumpkin pancakes.  AMAZING!  One can of pumpkin and 8 eggs with very little else.  Protein AND veggies!  Added bonus: the kids LOVE them! 

But, it just didn't taste perfect with peanut butter.  So, with a determination to find another use for our Vitamix (besides smoothies), I came up with a better autumn nut butter combination: 2 cups almonds, 2 cups pecans, and 1 cup walnuts.

It makes my Vitamix sound like it's breaking, but with the warranty and notes on such behavior in the recipe book, I'm convinced this machine was designed for this.

(One tip: eventually you can keep the tamper all the way in and it will help with a vortex to keep it all moving.)
