Dairy-Free Chocolate Sauce

Back in January I made some cupcakes for Rusty's party with a modified recipe from Nourishing Traditions.  It called for carob sauce and, as I'm definitely NOT against real chocolate, I made it with cocoa powder and coconut ingredients (making it dairy free).!  I quickly found it made great hot chocolate and has a great mousse consistency once cold that was yummy straight out of the container. 

Dairy-Free Chocolate Sauce

Prep Time: 10 mins.

2/3 cup cocoa powder
1/2 cup coconut oil
1/3 cup maple syrup
2 1/2 teaspoons vanilla extract
pinch of salt
1 cup coconut cream

Place all ingredients in a bowl and put in pan of simmering water.  Cook gently with wooden spoon, mixing until uniform.

Great on ice cream, as cake frosting, for hot cocoa, or by itself.  Enjoy!!
