Christmas Goodies Recipes 2010

This year our goodie bags were done SUPER early thanks to some great friends coming over to help out.  They consisted of peanut brittle, peppermint fudge, pumpkin chocolate chip cookies, spices for holiday wassail, and a tea bag...or some combination of the above.  :)  Pretty much mostly the same as last year's bags.

The wassail was my mom's recipe.  I got the recipes for the peanut brittle and peppermint chocolate fudge from  Some of the brittle consisted of me substituting half of the corn syrup for maple syrup...'cause that eased my conscience, making me feel like it was healthier.  All the sugar in the recipes was Rapadura.

The Pumpkin Chocolate Chip Cookies were a friend's recipe.  They're kinda more like a scone, with the bread texture, light and fluffy.

As some of those who got them asked for the recipes, here's the pumpkin cookie one:

Pumpkin Chocolate Chip Cookies

Prep Time: 15 mins.
Cook Time: 10 mins.
Total Time: 25 mins.
Serves: 3 dozen

2 ¼ cups flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon cloves
¼ teaspoon nutmeg
1 cup softened butter
¾ cup sugar
1 egg
1 teaspoon vanilla
1 ¼ cup pumpkin
1 cup chocolate chips

1.       Whisk together dry ingredients in one bowl, leaving out chocolate chips, and wet ingredients in another.  Mix both mixtures and add chocolate chips.
2.       Dollop onto baking sheet and bake at 350 degrees for 13-15 mins.
