Sunday Breakfast


I found a recipe and altered it to use healthier ingredients. It's Yogurt and Blackberry Waffles:

Ingredients:
3 Tbsp butter, melted
¾ cup fresh blackberries, washed and dried
4 Tbsp maple syrup
1 ¾ cups flour
1 tsp baking powder
1/8 tsp salt
2 eggs
¾ cup goat milk
1 cup goat milk yogurt

Directions:
1.       In a small bowl, mix the berries with 2 Tbsp maple syrup.
2.       In a medium bowl, combine the flour, baking powder, and salt.  In another medium bowl, whisk the eggs lightly and stir in the milk, sour cream, melted butter, and remaining 2 Tbsp maple syrup.  Stir the liquid ingredients into the dry ingredients and mix until just blended.  Add the berries and stir once or twice.
3.       Coat the waffle plates with nonstick cooking spray (olive oil).  Spoon a little more than 1/3 cup of the batter onto each side of the waffle plate and close the lid.  Cook the waffles for 4 minutes.  Check and continue cooking until golden brown.


They were great served with some fresh whipped cream with a little maple syrup mixed in.  The kids enjoyed them!!

Can't wait to enjoy them again...once I start dairy again...

Absolutely NO Milk?!

Tonight we went to my parents' for the Laker game and a fish fry.  My parents had a bunch of friends over that they golf and play tennis with. 

At one point my mom came in to get me and tell me that their friend, Bob Hughes, who happens to be a chiropractor, also does the RNA.  When I got in the kitchen he asked what he wanted to be read and I let him know the dietitian I saw told me my thyroid is bad.  He had me hold up my arm and placed his one hand wherever for reading and pushed down my arm with the other.  He checked different areas and told me my thyroid is fine, it's my pituitary gland that has issues.  The pituitary affects the health of the thyroid and needs to be taken care of first.

Later I found him again to ask him a little more about that and told him about how I was cutting out the protein in cows milk, but drinking goat.  He had me get the goat milk yogurt that we brought to test me for it himself.  After testing he said I really should avoid ALL dairy, at least for 3 months before reintroducing it. 

I guess I'll be tacking on a few more questions for the dietitian in Arroyo for my next visit.  I think I'll head this guy's advice on the dairy (since it's EXPENSIVE for goats milk products) and see how things go.

Since taking the supplements and following the advice I got the end of May my hands feel a lot stronger.  Before, when I would try to open jars, it felt the joints in my fingers were separating.  I don't have that problem anymore.  The nodes haven't gone away.  They're not any worse than they were, but they're still there.  My wrists seem to be hit and miss along with my elbows hurting again.  I guess they're out of place once more.  I'm thinking of visiting a chiropractor down here (maybe this new guy) and seeing where that leads.
