Sweet Potato Pie (and a shut my mouth!)

Seeing this recipe always reminds me of the country music song, Song of the South. It's a yummy, no guilt dessert!




1 cup mashed sweet potatoes, cooked
2/3 cup honey
2 beaten eggs
1 Tb. flour
1/2 tsp. cloves
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1 cupt light cream (half and half) I used milk
3/4 cup chopped pecans
9" unbaked pie shell

Blend sweet potato, honey and eggs. Add seasonings and cream. Stir in pecans and turn into 9" shell. (I sometimes just add them to the top instead.) Bake 50-60 mins. at 400 degrees or until done.

This makes one pie.
